When food becomes an object d’art, the kitchen evolves into an art gallery, overseen by its own curator. The result is a stunning spread of haute gastronomy, one that owes much to the science of cooking. And we aren’t just talking restaurants. Indian weddings too have become a place of gastronomic experimentation. Welcome to the world of molecular gastronomy, where the kitchen meets the laboratory, and culinary mainstays reconfigure their DNA.

Taking their cues from food revolutionists like Ferran Adrià (of El Bulli fame) and Heston Blumenthal (The Fat Duck), Indian chefs are dabbling in molecular gastronomy to infuse wedding menus with a surprise or two. There are culinary novelties like hot ice-creams for warm winter weddings, or sweet custard turned into pasta at high-vacuum pressure, while the nihari, the ubiquitous Awadhi staple, undergoes molecular dispersion, its flavours extracted and trapped inside a piece of naan.

In this universe, food is all about deception. For summer weddings on sultry evenings, the traditional raita is ‘spherified’ by using alginate as a setting agent to create a kind of jellified egg, which bursts in the mouth with the full flavour of yogurt and Indian spices in one go.


Molecular food menus are stealing the show with jaw droppingly innovative items like shrimp crème-brûlées. Such experiments can be tailored by keeping the palate and the wedding theme in mind. They’re bound to weave some culinary magic or the other, and are perfect for luxury weddings.
