Those who crave perfection regard food as something that not only satiates but also inspires art. What better occasion, then, to celebrate the love of the fine life than a luxury wedding? From lavish buffets to a world of haute gastronomy, Indian weddings have come a long way.

We’ve heard of culinary wizards and Michelin-starred chefs cooking up a storm in their kitchens, but there is now a new breed that has been honing their skills at the same table. These designers are food presentation experts who work alongside chefs to develop menus for the soirees, and to roll out visual fantasies on the plate. These food experts conduct intense research into the cuisines which they’ll be working with, before putting down their new ideas on paper.

You’ll come across the ubiquitous paneer tikka or kebab served in the shape of canapés moulded like intricate jewels, or Asian fare presented in a giant edible lotus that rotates as the table’s centrepiece, embellished with a glorious arrangement of pale purple vanda orchids, marigolds and pink gloriosa lilies. So the dining area is arranged with a lavish spread that’s not just a gastronomic treat but one that can be savoured visually.

For those with a sweet tooth, these food presenters are bursting with ideas, from giant macaroons to a ladoo tree (a structure sculpted from foam in which edible sweetbread sticks are pierced like branches, the ladoos hanging off the branches). The humble ladoo is also placed over baked sugar flowers (which serve as bowls). This way, even when the sweet little fancies have been consumed, the room is still graced with a beautiful work of art. There are also cascading chocolate waterfalls and fountains, and rabris served in petite shot glasses topped by jalebis.
